- 1/2 cup celery thin sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 3 Tbsp butter
- 2 cups of a good marinara sauce
- 1 cup chicken broth
Cooking Steps
Use three-quarters of the seasoned flour mixture for the meatloaf and reserve one-quarter for the tomato gravy.
In a large bowl combine the beef with three-quarters of the seasoned flour mixture, onion, bell pepper, celery, salt, and pepper.
Fold in the slightly beaten egg and lightly mix the ingredients.
Shape the meat mixture into a loaf and place in a loaf or casserole pan lined with parchment paper.
Place in the oven and cook for 60-65 minutes or until it reaches an internal temperature of 160 degrees.
For the tomato gravy, in a pan, over medium low heat, heat the butter and then add the reserved seasoned flour mixture.
Stir continuously until the mix incorporates, about two minutes.
Slowly pour the chicken broth into the pan and cook until it thickens, about 5 minutes.
Use a whisk to prevent and remove lumps if needed.
Add the marinara sauce and cook for an additional 7 minutes.
Slice the meatloaf and serve with tomato gravy on top.
Kitchen Tips
A gravy or sauce is thick enough if it coats the back of a spoon. Be careful not to increase the heat to speed up the process. Good things take time!
