- 1.5 cup heavy cream
- 1/2 cup mayonnaise
- 1 tsp salt
- 1/4 tsp black pepper
- 2 Tbsp fresh squeezed lemon juice
- 2 cups shredded sharp cheddar cheese
- 3/4 cup Ritz crackers — crushed
Cooking Steps
Preheat oven to 350 degrees.
Cook rice according to package directions or use pre-cooked rice from the grocery.
In a large pot halfway filled with water (enough to cover the chicken), add 1/2 Tsp salt and bring the water to a low boil.
Add chicken breasts and boil for 10-12 minutes.
The internal temperature of the chicken should reach 165 degrees.
Remove chicken from water, let cool and cut into 2-inch size pieces.
Place a steamer insert over the pot used to cook the chicken.
Add broccoli and steam for 5 minutes.
Remove broccoli, let cool and cut into 2-inch chunks.
In a large pan, melt butter and sauté onion for 5 minutes.
Add the seasoned flour mixture.
Stir for 2 minutes.
Slowly add chicken broth, using a whisk to prevent and remove lumps if needed.
Then slowly add heavy cream, using a whisk to prevent and remove lumps if needed.
Remove from heat and add mayonnaise and stir until it is incorporated into the sauce.
Add lemon juice and stir.
In a 9" x 13" or 3-quart casserole dish lightly greased with butter, place half of the chicken, half of the broccoli and half of the rice.
Sprinkle with 1/4 Tsp of the salt and 1/8 Tsp pepper.
Pour 1/2 sauce over the chicken and top with 1 cup cheese.
Repeat the second layer, in the same order as above, ending with cheese and then crushed crackers.
Pour melted butter over the crackers.
Cover with aluminum foil and cook for 25 minutes until bubbly and cheese is melted.
Remove the foil and cook for an additional 10 minutes until the cracker topping is lightly brown.
Let sit 10 minutes before serving.
Kitchen Tips
For convenience, you can use rice that is pre-cooked and packaged, ready for use. You can also use frozen broccoli in a steamer bag vs steaming it on the stove.
