Ingredients
- 3/4 tsp Camper Seasoning Mix
- 3 Tbsp all-purpose flour — mix with the listed Camper Seasoning Mix to make seasoned flour
- 1/2 tsp baking powder
- 1/4 cup cornstarch
- 3/4 pound shrimp (peeled and de-veined)
- 3/4 pound white fish
- 1 tsp salt
- 1/2 tsp black pepper
- 3 eggs — slightly beaten
- 2 cups peanut oil
- 2 lemons — quartered
- 1 cup tarter sauce
- 1 cup cocktail sauce
Cooking Steps
In a large deep-frying pan, add the oil.
Season both sides of the shrimp and fish with salt and pepper.
Place seasoned flour mixture on a plate and then add the baking powder and cornstarch and mix until incorporated.
Crack the eggs into a bowl and beat slightly.
Coat each piece of seafood with the egg, careful to let excess drop back into bowl.
Then gently roll each piece into the seasoned flour mixture, generously coating them.
Repeat for each piece.
Heat the oil until it reaches 350 degrees.
The oil needs to be at this temperature when the shrimp and fish are added.
Cook the fish and shrimp in batches.
Starting with the fish, using tongs, carefully put each piece into the pan and cook for 5 minutes.
After 5 minutes, turn the fish and cook another 5 minutes.
Cook until the internal temperature reaches 145 degrees.
Repeat the above process with the shrimp.
The seafood pieces should sizzle throughout the cooking process.
Serve with quartered lemons, cocktail and tarter sauce and your choice of side dishes.
Kitchen Tips
To be successful frying food, the oil needs to be hot enough before adding the food. Maintaining a proper temperature throughout the cooking process is the key. In this recipe, the fish and shrimp should sizzle throughout the cooking process. If not, raise the heat slightly. For a softer less crunchy outer crust, omit the cornstarch and baking powder.
