Place seasoned flour mixture on a plate and then add the baking powder and cornstarch and mix until incorporated. 4. Crack the eggs into a bowl and beat slightly. 5. Repeat for each piece. 8. Heat the oil until it reaches 350 degrees. 9. The oil needs to be at this temperature when the chicken is added. 10. Using tongs, carefully put each piece of chicken into the pan and cook for 10 minutes. Timer: 10 minutes 11. After 10 minutes, turn the chicken. 12. Cover the pan and continue to cook for 10 more minutes until the internal temperature reaches 165 degrees. Timer: 10 minutes 13. The chicken pieces should sizzle throughout the cooking process. 14. If not, raise the heat slightly if needed. KITCHEN TIPS The key to making successful fried chicken is to make sure the oil is hot enough before adding the chicken and to maintain a proper temperature throughout the cooking process. For a softer, less crunchy outer crust, omit the baking powder and cornstarch.
